Linzer Cookies

I tried baking the Linzer cookies from Martha Stewart’s recipe because it looked very Christmasy.

My kitchen became such a huge mess for the first time in a long time. I didn’t understand why I needed to use a food processor for this. Since I don’t own one, I used my blender. It didn’t work at all, then switched to a hand mixer, but that didn’t work either. So, I switched to using my hands only at the end.

I still think I didn’t need a food processer for this. If I started with hand mixer from the very beginning, it would have been much smoother.

I encountered many other tool related problems. All in all, it was quite a challenge bake, and it made me so tired. But at the end, the toasted almonds aroma took away my stress. The nutty flavor added also made the cookie pretty good.

Although the recipe says I could make 35 cookies, I made only 13 of them. It must be the size and the thickness of the cookie differences. I wrapped one raspberry and one apricot per household as Christmas presents.

You won’t believe this but I still had my peppermint brownies in my refrigerator although they are ready to go. I have only two more days left till Christmas day!!! I will deliver them no matter what together with the Linzer cookies.

Adjusting Neck

I started having Decompression therapy. It’s a method to cure the cervical vertebrae pain without surgery.

By stretching the cervical vertebrae (decompressing), it releases the pressure on the disks. Once pressure is released on the disks, ozone gas will be injected for better blood circulation. The therapy will complete by the end of January next year.

For my case, C5 and C6 vertebrae have minor deformations. So the disks around there are compressed. Therefore, I feel pain all the time.

Before retiring, I was sitting in front of computers all the time everyday, and had aches for many years.

I have high hopes for this.

To enjoy the rest of my life, I want to be a super healthy wonder woman quick!!!

Gila Trail

Gila trail is one of the longest trails in Snow Canyon State Park.

We have already hiked the south end and middle of the trail before. This time, we started hiking from the north. We had only two hours until sunset. It was a 4 mile roundtrip hike.

The snow on the trail hasn’t melted in shady places because we have had below freezing nights and cold daytime temperatures recently.

A Cholla cactus looks happy getting sunlight.

We saw the snow covered Pine Valley Mountains from a far distance.

The inside of the canyon was already dark, but the view was still great to me.

I was enjoying it very much simply being there. I was running on and off, but fell forward onto the ground hard while looking at the fascinating view.

I am glad I didn’t have my camera.

My cell phone got the most damage, and I got a bruise on my right toe, knee, and palm.

It was *still* a fun sunset hike although I hurt myself.

Morning in Zion

We visited Zion National Park again the following morning. We saw pretty Christmas illuminations near the park entrance because it was still so dark.

Our purpose this day was to see the morning sunrise from the east side of Zion.

The scenery is different once you go through the tunnel because it is no longer in the valley.

Because of that, peaks and slopes are more gentle.

We can see the cross-bed strata very well.

Because it was so early, we drove pretty much together with a snowplow. So we waited a little for it to drive ahead at the east entrance so we wouldn’t block it.

We sensed that the morning light was gradually coming through the thick clouds.

I found my Christmas tree at the tip of the rock. Can you see it? I decided that I will take pictures of the tree illuminated by the morning light one of these days.

By the way, look at these icicles. Do you agree with me that something is wrong? It’s against the law of gravity. They were not hanging down straight. Why did such a thing happen?

In any case, we were awed by the sight that suddenly appeared right in front of us.

The morning light had finally broken through the clouds.

The scenery had changed its look again dramatically.

The hills breathed again for a new day with the light.

When we exited the tunnel on our way back to the valley, we found so many cars already lined up on the road. Ugh! But what a stunning view it was!

So we stopped our car and started taking pictures.

Because we had an errand in the afternoon, we were hurriedly going out from the park. But even the reflection of the side view mirror tried to stop us leaving there because it was so gorgeous.

I enjoyed the view through the side view mirror for a while. Later, I realized that I took a selfy shot capturing views from the side view mirror. Can you see me faintly holding my camera?

On the way back home from the road, we saw the snow covered Beaver Dam mountains. It is very true for me that my happiness gauge goes up so high when seeing beautiful views like this.

Snow And Sunset

This is the continuation of yesterday’s blog entry.

We went to the Narrows after stopping at the Zion lodge.

We simply enjoyed walking around and taking pictures there.

The snow stopped at one point, and occasional blue patches of sky made us happier.

This was because we hoped to take some sunset pictures with good light.

I found an image on the side mirror showing a rock with sunset light!

We stopped the car, and looked up towards the rocks. They were gorgeously shining.

It was already so close to sunset time. We went down to the Virgin river quickly.

I wanted to take pictures of Watchman getting light, but it was too late.

Only thin slivers of light were there.

Instead, we got beautiful light on East Temple and the nearby neighbor peaks.

The East temple getting sunset light was so divine. It was one of the pictures I always wanted to take.

Thank you Zion! It was such a wonderful day again because of you!

Winter Has Arrived!

We went to Zion National Park to take pictures because the weather report said it was going to snow.

As the park got closer, the snow got heavier.

And just like we wanted, the park changed to a snow wonderland.

We went to the Zion lodge first.

We enjoyed the grand views from the lodge very much even though we couldn’t see the peaks as the thick clouds covered them.

We crossed the Virgin river from the lodge, and walked on a trail.

Why is that scenery becomes so beautiful once snow covers the land?

I guess someone had waved a magic wand.

While we walked the slippery trail, we regretted that we didn’t bring our crampons.

So we soon gave up walking and came back to our car. When we got to the parking lot, we realized that the snow was on us as well.

The snow was on the buck’s gorgeous antlers as well.

Winter had come already.

Hike 36: 砂岩山 Sandstone Mountain

The white capped mountain is Sandstone Mountain in the Babylon area.

Our plan was to go around Sandstone Mountain by bushwhacking. But we suddenly remembered an errand, so we needed to give up at the bottom of the Mountain, making it a short 1.7 mile hike.

The rock looks like it is on the way to becoming hoodoos.

This sight reminded me of a follower who is kneeling before the mountain god.

This area exposes mainly the Navajo Sandstone formation.

We wanted to view the sunset light around here. As I mentioned above, we needed to leave earlier than planned. This was because we needed to buy a pie before the shop closed at 6 pm. So, we reluctantly left there. The food power was greater than a beautiful sunset.

Dinosaur At Babylon

(英文) We do not know why this place was named “Babylon”. There are only a few websites documenting this location, according to this web site managed by Washington county Historical Society.

It is called “historic” because there was a mine and a mining town named Babylon here at the beginning of 1870.

We didn’t see much of the ruins here, but instead we went down to the Virgin river.

The Virgin river is known because it carved a deep canyon for millions of years. This canyon was designated Zion National Park.

I imagine that dinosaurs roamed this area by the riverside during the Jurassic era.

You may ask me why I can say such thing? I say because the actual dinosaur footprints exist near it.

The stride length is about three feet.

This stratum preserved many footprints very well. And the slanted strata in this area made me guess that many continental movements happened since then.

After that, the entire area was under the sea during the Cretaceous era. I am awed by the fact that the footprints still keep their shapes well through all the Earth’s changes.

End Of The Year Gifts

There are many reasons why it becomes so busy when we get into December. The gift exchanges with our neighbors is one of the reasons.

I baked peppermint brownies this year instead of the usual cookies. It’s from my favorite Martha Stewart’s recipe.

I cut it a little smaller so that it is easier for us to eat. What a relief that I am already ready to distribute them.

Spanish Wash

We went to Spanish wash in Red Cliff Desert Reserve because we heard that an owl had been seen there. We are not quite sure of the exact distance, but it was about 4.5 miles out and back along the Spanish wash.

We went through the long dark tunnel first.

Then, we went through places like this to get to deeper sections.

This was the place where the owl had first been spotted.

But we didn’t see any sign of owls there, unfortunately.

So we marched on. Then I realized that the hills were greener than before because the moss was greener.

It looks so cushiony.

The picture below also shows the moss, but if you look at it closer, you can see a root stretched through the rock. How awesome to see such vitality. I imagine that it will become petrified wood in a million years.

We went on a little further in the wash, but couldn’t find any owls. They must have gone on vacation for the end of the year.

So we decided to go back along the same path we came in on, but this time, we focused on looking for arrowheads on the ground.

I imagine that American indigenous people made many arrowheads for hunting. We found a few. The left side of the sample above indicates that it was an arrowhead, although the tip on the right side was broken off.

By the way, what do you think these are?

Aren’t they delicious looking?

They are called “Moqui marbles” or “Moqui balls”. After millions of years, the iron separated from the Navajo sandstone, oxidized, and became a ball. It’s also called a “concretion.”

The picture below shows a moqui ball that is still attached to the sandstone wall. I can see that rain water eroded some of the sand around it. I wonder how long it will take for this particular ball to come out from the wall as the erosion continues. Isn’t it interesting?

At one point, we found a moqui ball apartment. I am sure this was not formed naturally.

My Town

It’s been 3.5 years since we moved to this town. We made many memories since then, and they are our treasures.

Although we’ve visited many places around here, we realized that we missed one place where we must go.

It’s known as “Dixie rock” where we can view the entire town.

The view from there was indeed great.

Although the town is changing everyday, I wish to preserve the view that we can see all the way to Zion National Park.

Arrowhead Mesa

The group hike was quite a challenging 8 mile hike starting from Fort Pearce Heritage site.

So, we made a compromise plan where we would turn back partway through.

We hiked 6.5 miles total with 1000 feet of elevation change.

The area exposes many interesting strata from Triassic period, about 250 million years ago.

We had a short break with a great view looking out over layers of uplifted rock made by earth movement and erosion.

We moved on further. Chester the dog doesn’t know the word fatigue.

But the time came for us to turn back. Because Banchan is under treatment for his plantar fasciitis, we reluctantly said good-bye to everyone.

It was a little sad when we saw our group continue on.

But we walked slowly on the return, and rather enjoyed examining petrified wood and observing bugs.

Ugh, by the way, I didn’t mean to observe this close, but I swallowed a bug as it flew into my mouth accidentally. I hope it’s okay to eat a fly-sized bug. I won’t die from it, right?
